This wine has been produced from Merlot and Cabernet Sauvignon from carefully selected vineyards in Wrattonbully, South Australia. The grapes were picked and transported to our winery in the Hunter Valley. It was immediately crushed and cold soaked for 5 days and then fermented in 7 tonne tanks for 10 days with gentle pump overs 3 times a day. The wine pressed off skins and put to French oak to undergo maturation for 12 months before being blended, filtered and bottled.
Discounting a couple of short heat spells, the conditions during the growing season were almost ideal with generally mild and dry weather. Conditions in the summer months continued to be ideal with warm days coupled with cool nights. Combining with the lower cropping levels the favourable ripening conditions resulted in a early and condensed vintage.
